First Day of School

Well, we survived. I admit that I was a little teary eyed as they marched off to class. Luckily it was outside and bright so my sunglasses saved me from looking like a dork. Ü
I think that another reason I was able to let go a little more easily is that we had a ROUGH day yesterday. Superkid destroyed the blinds in his room, put baby powder all over my room, was constantly fighting or teasing the other kids, and overall didn’t listen or obey. It was one of those days where you go to bed and wonder what happened! BUT we survived and now he’s in school.

Me: *turning off the TV*
Superkid:Hey!
Me: You need to go play. Go read a book, play with toys, play outside, you choose, but you are done watching TV.
Superkid: turn it back on mom. (in growling voice) I COMMAND YOU TO!
Me: *laughing quietly* you what?!
Superkid: I COMMAND you to turn the TV back on. Arrrgh.
Me: funny. Go play.

Potato Casserole (funeral potatoes)

10 Potatoes or 1 large bag of shredded hashbrowns
2 cans of Cream of Chicken soup
1/2 can of milk
2 cups Sour Cream
1 c grated cheese
1/2 cup melted butter
1/3 cup chopped onion (optional)
salt and pepper to taste
Grate potatoes (if you are using real ones) and put in the bottom of a 9 X 13 pan (or just put the hashbrowns in the pan). Mix all the other ingredients in a separate bowl and pour over the top. Make sure the mixture goes all the way to the bottom. If it doesn’t use a fork and move things around a little so all of it has the yummy sauce on it.
Optional topping: 2 cups cornflakes mixed with 2 T melted butter and a handful or 2 of shredded cheese.
Bake at 350 for 40 mins or until hot and bubbly.
I enjoy adding some ham or bacon in as well to make it extra yummy, but you don’t have to. You can also top with the french’s fried onions.

Cinnamon Rolls, Yummy!

6 cups water
1 T salt
3 1/2 cup sugar
1/3-1/2 cup oil
1/2 cup gluten
3 T yeast
13-14 cups flour
save out 1/2 cup water to mix yeast in. Add salt, sugar, oil and gluten to the rest of the water. When yeast is dissolved add it to the mixture. Then add 1/2 of the flour. Mix until moist then add the rest. Add until the dough is still a little sticky. Let raise until double. Punch down. Roll out and coat with butter or margarine and then with cinnamon and sugar. roll and cut. Place on baking sheet and let raise until they are the size you want. I like them to double in size. Bake at 350 for 10-15 mins or until lightly browned. Frost and enjoy!! Yum!
(***NOTE- this is for a LARGE batch of rolls. Normally we make 1/2 cinnamon rolls and the rest into sweet dinner rolls and still get tons of each. You would be fine to cut the batch in 1/2. Enjoy!! ***)

First-ish day of school

Superkid had his first-ish day of school yesterday.
He got to go to Kindergarten for orientation and to sign up for testing. He was so excited. I was nervous and sad. I have no idea what I will be like next Monday when he starts school for reals. I’m sure I will be the crying mom and the “Boo-hoo in the Library” the school is hosting for us. ;o)

Cherry Turn Overs

2/3 plus 2 T of shortening
1 tsp salt
2 cups flour
4-5 T water
Mix the shortening, flour and salt. Cut together until it makes tiny balls. Add water and mix until it is fairly formed (making pie crust).
Roll it out like you would for a pie crust. Cut 3″ circles. I used a lid to a sour cream container. It was perfect size. Put about 1 T of your choice of topping. I used Cherry pie filling, blueberry, apple or any other kind would work well too. Place it in the center of the circle. fold in half. Use a fork to press the open edges together to make a pocket. Prick the top. Repeat. Ü You can then sprinkle with sugar on top or back without the sugar on tip and drizzle icing over the top. I like the icing, Jefe likes the sugar. Bake at 350 for 20-30 minutes or until lightly browned.
Eat and enjoy!!
