I have been working on this ebook for over a year now, trying to get it perfect. It occurred to me, that it may never be perfect, but the experiences that we have gone through as a family have helped us to become stronger and a little more cleaver as we try to protect other families from facing the same challenges that we have had.

Well, today I am officially 30 weeks and 3 days pregnant. Baby is about 3 pounds now and approx. 17 inches (according to the baby books). If the pattern continues as it has with my other kids, we are looking at about 6 1/2 to 7 weeks more of being pregnant and the bed-rest should begin in about a week and a half. So far so good though
)
So I’m sure you are wondering if we have any names yet? The answer is no. Honestly, I don’t think we have even talked about it yet. Sad, I know. But where we don’t name baby till we meet her anyways, we figure we have a few more weeks still
)

This is a sinfully delicious treat that I have been enjoying for a while now
) I admit that they are so good that I don’t even like to share them
)
So…here is the recipe. Enjoy!
Carrot Bars:
1 cup flour
1 tsp baking soda
1 tsp cinnamon
1/4 tsp salt
2 eggs
1 cup sugar
2/3 cup vegetable oil
2 jars baby food carrots (4 oz each)
Heat oven to 350. Mix sugar, oil and eggs and beat. Add baby food and vanilla. Mix. Add remaining ingredients and mix. Grease a 9 x 13 and pour mix into pan. bake 20-25 minutes or until done.
Frosting:
2 tsp. vanilla
4 oz cream cheese
1/4 cup butter or margarine
2 cups powdered sugar
Add cream cheese, butter, and vanilla in mixing bowl. Beat until combined. Gradually add powdered sugar until frosting is the desired consistency. Spread on top of cooled bars.
Store in the fridge in a covered container.
(This recipe is great for a 9 x 13 sized pan, but if you double the batch, it fits really well in a jelly roll pan. CAUTION: these are addicting and super yummy!)
