There are so many variations to this recipe, but this one is our favorite.
You will need:
1 lb ground beef (cooked)
taco seasoning
sour cream
cheese
2 avocados
lemon juice
season-all (Lawreys season all salt)
olives
tomatoes
refried beans (lg can)
Combine the meat and the taco seasoning according to package instructions. Meanwhile in a 9 X 13 pan spread the refried beans evenly in the bottom of the pan. When the meat is ready, spread it on the top of the beans. Next layer will be sour cream. I like to use about 16 oz. The next layer will be guacamole. To make this, peal the avocados and take out the seed and place them in a bowl. Mash until smooth (or until the consistency you like). Add 8-12 oz of sour cream and then lemon juice and season-all to taste. (I prefer that my guacamole is tangy and super creamy so I add quite a bit of the lemon juice and sour cream). When finished to your liking – spread mixture over the sour cream in the pan. Next layer is shredded cheese followed by tomatoes (cubed or sliced) and sliced or diced olives.
Chill in the fridge and serve with tortilla chips. Super yummy. I personally like it better the second day after the flavors have mixed a bit.
I have heard of other layers you can add, or even using salsa in place of the tomatoes layer. It is up to you. Add things or take them away was you want and make this a dish your family loves. Enjoy!

So today I begin my “August Resolutions”. Strangely, they begin on Aug 28th (not the 1st). We will see if they are more successful than my New Year’s Resolutions ;o)
Today I want to share a Thank You. This special thanks goes to Julie- my server last night at the Olive Garden in Layton, Utah.
Julie- you were kind, helpful, quick and funny. Your service was above and beyond normal expectations. Even at the very end of our evening together when I was stuffed to the gills, you tempted me with desert. Although I didn’t indulge last night, I’m still drooling for them today simply from your description of them. You truly were a delight and I am so glad that our paths crossed for a short time last night. Thank you for helping me have a wonderful evening.
